Almojabanas

Yesterday my little flower, Anastasia ask me to make some Almojabanas for breakfast. They love them sprinkled with brown sugar and cinnamon but the real recipe is just salty as they are. But the saltiness and the sweet contrast is simply delicious. They are very yummy with a good cup of coffee and I prepare some bacon and sausage too. Just another option from the pancakes and waffles or the oatmeal or cereal and they are as easy to prepare as a pancake mix.

To make 24 of them if you have a big family you need:

2 cups of milk
4 tablespoons of butter
3/4 teaspoon of salt

2 cups of fine ricemeal
2 teaspoons of baking powder
3 eggs

1 1/2 cups of the cheese you prefer. I like cheddar, Edam even mozzarella or our native cheese called queso blanco.

Boil the milk, butter and salt

Combine the ricemeal and baking powder. Add eggs one at a time and mix.

Cook over moderate heat stirring occasionally with a wooden spoon until mixture separates from the sides of the saucepan.

Remove from heat and add cheese mixing thoroughly.

Let stand a few minutes

Drop mixture by spoonfuls in hot oil at medium high heat until golden brown.

This can be served as an appetizer with mayoketchup sauce, which is made of mayonaisse, ketchup, garlic and lemon juice.
